Grape varieties: 100 % Cabernet-sauvignon

Terroir: Mostly sandy-clay soil.
Vine about twenty years old, trained in double Royat cordon, and located on the northern slope of the Petit Luberon.
Controlled permanent grassing.
Area surrounded by hedgerows that are both biological reservoirs, but also a natural protection against climatic hazards.

Winemaking: Night harvest to limit any risk of oxidation and to preserve the color. Direct pressing, static settling for 48 hours, then fermentation at 13°C in thermo-regulated stainless-steel tanks to preserve the freshness of the aromas.
At the end of the alcoholic fermentations, we carry out a racking of cleanliness in order to preserve the fine lees and to eliminate the coarsest. Aging and suspension of the lees for 4 months to ensure roundness and suppleness in mouth.
