Grape Varieties: 80 % Black Grenache & 20 % Syrah

Terroir: Clay and sandy soil.
Vine about ten years old, trained in double Royat cordon, and located on the northern slope of the Petit Luberon.
Controlled permanent grassing.
Area surrounded by hedgerows that are both biological reservoirs, but also a natural protection against climatic hazards.

Winemaking:Night harvest, direct pressing for the Grenache Noir, and bleeding for the Syrah.
Static settling for 48 hours, then fermentation at 13°C in thermo-regulated stainless-steel tanks to preserve the freshness of the aromas. During the fermentation, 5% of the volume goes into new barrels to bring complexity and aromas.
At the end of the alcoholic fermentations, we carry out a racking of cleanliness in order to preserve the fine lees and to eliminate the most coarse. Work on the fine lees for 5 months.
